Chocolate Covered Katie didn't want her sweet tooth to get in the way of her healthy lifestlye so she worked out how to make the good stuff taste as rich as the deliciously bad. Here, she gives ELLE some of her greatest hits.  

Nut-Free Chocolate Fudge Balls

You need:

  • 1 1/2 cup pitted dates
  • 1 tbsp plus 2 tsp cocoa powder
  • 1/8 tsp salt
  • Small handful chocolate chips
  • Optional shredded coconut, cocoa, melted chocolate, etc.

Make them:

  1. Combine the dates, cocoa, and salt (and chips if using) in a strong food processor, and blend until completely smooth. Scoop into a bowl.
  2. Freeze until the sticky dough is firm enough to roll balls (a 1/2 hr or so).
  3. Once balls are rolled, either with your hands or a cookie scoop, you can roll in the optional coconut or cocoa or just eat them plain. Store leftovers in the freezer to keep them as firm as possible, but they can also be left at room temperature for a few hours.

Chocolate Chip Cookie Overnight Oats

For 1 serving you need:

  • 1/2 cup rolled oats
  • 1/8 tsp salt
  • 1/2 cup vanilla yogurt - I like nondairy coconut yogurt
  • 1/2 cup milk of choice
  • 1 tbsp chia seeds (can be omitted)
  • 1-2 tbsp chocolate chips or cacao nibs
  • sweetener of choice

Method:

In a small mason jar or lidded container, stir together all dry ingredients. Add everything else, and stir well. Cover the jar and let it sit overnight. The next day, stir the overnight oats and eat.
