Oh. Wow. These have got to be tried. And apparently they're ludicrously close in taste to real cheesecake.
The cheesecake part is mostly down to cashews, which are soaked and heated and mixed with lemon and almond milk and sweet syrups.

These delicious looking ice cream sandwiches use vegan cream cheese to make a lemon cheesecake ice cream, to which is added a blueberry swirl. The sandwich part uses Graham Crackers, but for non-Americans, you could substitute a different vegan biscuit - such as Biscoff's lotus biscuits? Or... better yet, bourbons?
