Bored of spending a fortune on pre- and post-gym snacks? These almond, date, cacao and coconut energy balls are easy to make, healthy and super tasty. Full of iron, potassium, magnesium, vitamin E and protein, these will boost your energy levels and your mood. Plus, they taste like chocolate truffles. Hungry yet? Here’s how you make them:
Makes 8-12 balls
Ingredients
- 200g dates, pitted (buy the best ones you can afford, like Medjool – the plumper, the better!)
- 70g ground almonds
- 30g desiccated coconut
- 3 tablespoons raw cacao
- 1 teaspoon date nectar (we used Beloved)
- pinch of salt
Equipment
- Food processor
Method
Put all the ingredients in the food processor, blitz to a crumbly pulp, then remove and shape into bite-sized balls (it should make between eight and 12). If you really want to treat yourself, roll the balls in cacao powder and desiccated coconut. Store in fridge – they should keep for about a week. Enjoy!
