It's said to be the most important meal of the day, certainly the most fun. When else can you drape your meal in maple syrup? Or cover it in a thick slab of butter? Never, that's when.

Here a few ELLEUK.COM editors share their breakfasts - including a few that made our bellies grumble. 

'For an Indian Summer late breakfast in the garden the other weekend my girlfriend Jen made us some Danish style open sandwiches inspired by a recent trip we took to Copenhagen. The wine glass was for a fruit smoothie that I made to go with it... We do not drink wine for breakfast - I promise.'  Lotte Jeffs, Deputy Editor 

'During the week, I'll just have basic cereal (Kellogg's Cornflakes or Weetabix) , but every Saturday me and my friends have a late breakfast together #brunchclub. If I'm cooking it will be something involving eggs my current favourite to make is Spanish baked eggs with greek feta, coriander and sourdough bread. If we're going out I'll grab a fruit smoothie, and crumpets, with a slab of fresh honey, goats cheese and rosemary (from M1lk in Balham). It is delicious! Lisa Rahman, Art Editor

In all variations - soft boiled with anchovy soilders, scrambled on rye with sliced tomato, a feta and spinach omelette makes any day better, and eggs baked in a tomato and cannelloni beans for a weekend brunch.
