Adios avocado, ciao kale, there’s a new vegetable taking over your Instagram feed – your grandmother’s favourite brassica, the cauliflower.

As our concerns about the enviroment (and our own growing waistlines) grows, vegetables have become a more popular centre part of our evening meals. And it seems, the cauliflower in particular, has surfaced high on the trending scale.

Banish all thoughts of it being a bland blob, it's now being named the hipster food of the year. Both low in price, and in calories and yet super versatile – it can be boiled, mashed, turned in to rice, baked with mammoths of cheese, and even made in to a flour and then transformed in to chocolate cake.

The recipe de jour is served whole and roasted with thyme and a shave of hard cheese and truffle oil. You'll find these served on the menu at Soho House and Berber & Q.
