THE COCKTAIL
Flat Peach Bellini
For the purée
Sweet and succulent, when it comes to flavour, the flat peach kicks regular white peaches to the curb. Take advantage of their short harvesting season (late spring to summer), by puréeing them, to produce an enticing almond top-note and a dry finish that marries perfectly with Prosecco.
This makes about I litre of purée (20 Bellinis) and can be frozen ·
1kg flat peach flesh ·
10g peach skin ·
75g caster sugar ·
Carefully remove the skin and stone from the peaches · Place ingredients in a food processor · Blend on speed 4 until a smooth consistency is achieved. · Pass the purée through a sieve, using the back of a spoon to extract as much as possible. Freeze for up to a month, or store fresh in the fridge for 3 days.
