We can all agree that cutting down on waste is A Good Thing. However, we would argue that cutting down on waste through the medium of cocktails is An Even Better Thing. Especially when said cocktails are crafted by Ryan Chetiyawardana, aka Mr Lyan, at his chic Hoxton bar White Lyan. So how, you may wonder, can cocktails cut waste? Well, this new menu includes the Paper Trail, using paper syrup made from old napkins and amylase (plus Scotch, vermouth and bitters); while the Petrini Spritz uses 'saucisson offcuts and magic cheese leftovers' (uh huh) to create essentially a bar snack in a glass. Intrigued? You know what to do.

Welcome to what is, in effect, the foodie equivalent of having an angel and a devil on your shoulder. Because the new menu at Searcy's at The Gherkin lets you decide: January health kick, or January? F**k it! On the one side, you have Saintly Suppers curated by Insta-guru Clean Eating Alice, featuring dishes such as roasted aubergine with feta, tahini and pomegranates, and super-seed load with smoked salmon and minted yoghurt. Meanwhile, over on the dark side, chef Barry Tonks' Sinners' dishes include foie gras and lobster ravioli, truffle risotto and buttery tart tatin. Either way, you win: this is food to (ditch the?) diet for.
