You can whip up this simple and delicious recipe in a spare twenty minutes and it makes the perfect on-the-go breakfast, dessert or afternoon pick me up.

Lemon and Honey Flapjacks

Makes 9

Ingredients:

300g jumbo oats55g oat flour140g honey60g coconut oil150g cashew butter70g coconut sugarJuice of 2 lemonsZest of 3 lemons

Method:

Preheat the oven to 180 degrees celsius and line a brownie tin with greaseproof paper. (Mine was 27x20cm)

In a big bowl, mix together the oats and oat flour and then set aside.

Weigh the other ingredients  into a pan and heat on a low to medium heat until the coconut oil has melted and you have a nice smooth mixture.

Pour this wet mix into the bowl of dry ingredients and stir well.

Spoon the mixture into the lined tin and bake for 15 minutes.

Leave to cool for 10 minutes before slicing into squares and then leave to cool completely before removing from the tin.
