Pancake Day. One of our favourite national holidays. It is a national holiday, right?

We can't take total credit for this incredibly tasty recipe - it's from our French friend Robin, who in turn had this passed down to him from his mother. 

We love our pancakes with lemon and sugar but if you are making them for a main course, serve with wilted spinach and gruyere cheese.

2 eggs

100g Plain flour

300g Milk

2 level tablespoons of sugar

A pinch of salt

40g butter plus extra for frying

Sift the flour into a bowl, add the flour and sugar and make a well in the middle

Drop the eggs into the well

Pour in the milk and whisk to form a batter

Warm the pan and melt the butter  - add the melted butter into the batter

Melt the extra butter for frying and add in a ladle of batter (you want your pancakes to be thin)

Cook for a minute on both side - flip with confidence!

Serve with Lemon and sugar
