When personal trainer and fitness blogger Faya Nilssonset up Fitness on Toast in 2013 it was primarily intended as somewhere for people into the same things as her to happen upon some healthy recipes, nutrition tips and workout advice.

Before long, her message spread. Today, Fitness on Toast (so named after Swedish-born Faya discovered just how fond we Brits are of anything on toast) is a must-visit for anyone interested in a healthy, active lifestyle.

Living proof that fitness, nutrition and fashion go hand-in-hand, Faya will be joining ELLE at the #FashFit event at The Hoxton Hotel, Holborn, on 9 April. 

Part of the ELLE Influencer series, #FashFit will be celebrating Swarovski's newest offering, Activity Tracking Jewellery, which tracks your every move – at work, rest and play – and looks good while it does it.

But first, get ready for the big day by trying out these easy, healthy and – importantly – tasty recipes at home:

1 |   Chocolate Avocado Mousse 

(Serves 4)

Ingredients: 

4 large squares of 70 per cent dark chocolate

1 large & very ripe avocado

1 tbsp manuka honey

1/2 cup of unsweetened almond milk

2 tsp pure vanilla extract

Pinch of pink Himalayan salt

Crushed nuts (I like almonds or hazelnuts, but pecans and cashews work as well)

Fresh berries, coconut flakes, cocao nibs (for garnish)

Method:

1 |  Pop the chocolate squares in a bowl over a saucepan of simmering hot water. Gently stir until the chocolate is melted and smooth.

2 |  Place the avocado, vanilla extract, manuka honey, almond milk, pink salt and cocoa into a blender and gently blitz the mixture until it's the consistency of a light mousse (2–3 minutes).

3 |  Scrape the mixture from the blender and spoon into serving glasses on top of the smashed raspberries. Leave in the fridge for a few hours to chill.

4 |  Sprinkle crushed nuts, cacao nibs and some berries on top to serve.

2 |  Energy Balls 

(Makes 6-12, depending on size)

Ingredients:

400g dates

100g almonds

4 tbsp coconut oil

Pinch pink Himalayan salt

4 tbsp raw cacao nibs

4 large squares of 90 per cent dark chocolate (use 70 per cent if that's too intense)

1 cup organic shredded coconut

Method:

1 |  Chop and de-seed the dates.

2 |  Place the almonds, coconut oil, pink salt and cacao nibs in a blender and pulse.

3 |  Spoon the mixture into a bowl, add the dates and mix together with your hands.

4 |  Roll into bite-sized balls.

6 |  Break up the chocolate and slowly melt in a bowl over a pan of hot water. Dip one ball at a time into the melted chocolate, then roll in the coconut flakes.

7 |  Leave to chill in the fridge for around two hours to set.

3 |  Lentil Soup

(Serves 4)

Ingredients:

2 tbsp oil

1 onion

½ cup uncooked red lentils

2 carrots

2 vegetable stock cubes

3 tomatoes

1.7 litres of water

1 bay leaf

Fresh chilli (to taste)

Salt and pepper (to taste)

Method:

1 |  Peel, chop and fry the onion until soft.

2 |  Peel and finely shred the carrots and roughly chop the tomatoes. Add to the onion with the finely chopped chilli.

3 |  Rinse the lentils and add to the pan.

4 |  Add the stock cubes, water and a bay leaf to the pan and cook for about 10 minutes or until the lentils are soft. Season to taste and serve.

4 |  Raspberry & Fresh Lime Ice Lollies

(Makes 6-8)

Ingredients:

150g ripe raspberries

1–2 fresh limes (to taste)

1 apple

Method:

1 |  Run the apple and one lime through a cold-press juicer. Add extra lime juice (freshly squeezed) to taste.

2 |  Rinse the raspberries and pulp in a blender.

3 |  Add half a cup of homemade juice to the raspberry mixture and taste; if needed, add a little more to naturally sweeten the mixture.

4 |  Pour the mixture into the ice lolly containers and place in the freezer until frozen (about five hours).
